Recipe: Ginger Lime Slaw



Jacobs Nest's Ginger Lime Slaw 


  • 4 Cups of Cole Slaw Mix 
    • (I used Fresh Express 3 Color Deli Cole Slaw, it has Green Cabbage, Red Cabbage & Carrots)
  • 1 Bunch of Garden Onions (approximately 6 to 8 onions) 
    • Cut the green stalk and root tip off and finely chop the onions
  • 1 Cup Fresh Chopped Kale 
  • Fresh Ginger Root- Grated
    • Cut about a two inch square of ginger root, peel.  Grate finely.
  • 4 Tablespoons of Red Wine Vinegar 
  • 4 Tablespoons of Lime Juice 
  • 3 Heaping Tablespoons of Duke's Mayonnaise 
  • 1 Tablespoon of Sugar 
  • 1 Teaspoon (more or less to taste) Red Pepper Flakes 
    • (don't leave these out, they MAKE it!)
  • Salt & Pepper to Taste

Place all ingredients in your mother's passed down magic slaw bowl & mix.  If you do not have a magic slaw bowl, any medium sized mixing bowl will do.
